Menemen Recipe

Ingredients

  • 3-4 tablespoons of oil
  • 3-4 onions
  • 3-4 long green peppers
  • 3-4 tomatoes
  • 1/2 a bunch of parsley
  • 4 eggs
  • Salt
  • Black pepper

Menemen recipe

  1. Dice parsley stalks, chop onions and green peppers and put them into a pan.
  2. Add oil and saute on a low heat until they turn yellow while stirring occasionally.
  3. Peel the tomatoes, chop into small pieces and into the pan. When the tomato starts to disintegrate, add parsley. Speinkle with salt and black pepper.
  4. Whisk eggs in a bowl, add into the pan and stir.
  5. Once the egg is cooked, remove from heat.
