Macaroni with Tomato Sauce

Ingredients

  • 1 package (500 g) of macaroni
  • 4 tablespoons of oil (2 tbsp for macaroni, 2 tbsp for sauce)
  • 1-2 onions
  • 2 cloves of garlic
  • 3 ripe tomatoes
  • 1 tablespoon of tomato paste
  • 1 carrot
  • 1 calery stalk
  • Parsley stalks
  • 1 1/2 tablespoons of flour
  • 2-3 cups of beef stock or water
  • 1 teaspoon of salt, sugar, black pepper

Directions

  1. Tomato Sauce : Sauté chopped onions, garlic and parsley stalks until they turn yellow.
  2. Add diced carrots and celery and stir occasionally.
  3. Add flour and stir occasionally.
  4. Add grated tomato, 2-3 cups of beef stock (or wine, if desired). Cook slowly.
  5. Sieve with a spoon. Add salt, black pepper and sugar.
  6. Boil macaroni in a pot with the lid partially uncovered and sieve when cooked. Wash with cold water, and pour in 2 tablespoons of oil.
  7. Pour hot tomato sauce on top and stir. Keep warm in an over until served.
