Macaroni with Tomato Sauce

Ingredients
- 1 package (500 g) of macaroni
- 4 tablespoons of oil (2 tbsp for macaroni, 2 tbsp for sauce)
- 1-2 onions
- 2 cloves of garlic
- 3 ripe tomatoes
- 1 tablespoon of tomato paste
- 1 carrot
- 1 calery stalk
- Parsley stalks
- 1 1/2 tablespoons of flour
- 2-3 cups of beef stock or water
- 1 teaspoon of salt, sugar, black pepper
Directions
- Tomato Sauce : Sauté chopped onions, garlic and parsley stalks until they turn yellow.
- Add diced carrots and celery and stir occasionally.
- Add flour and stir occasionally.
- Add grated tomato, 2-3 cups of beef stock (or wine, if desired). Cook slowly.
- Sieve with a spoon. Add salt, black pepper and sugar.
- Boil macaroni in a pot with the lid partially uncovered and sieve when cooked. Wash with cold water, and pour in 2 tablespoons of oil.
- Pour hot tomato sauce on top and stir. Keep warm in an over until served.
