Mutton With Vegetables (Boiled)

Ingredients
- 1 kg mutton meat with bones
- 3-4 small onions
- 3-4 potatoes
- 1 small celery stalk
- 1 carrot
- 1-2 eggs yolks
- Juice of 1-2 lemons
- 6-7 sprigs of parsley
- Salt
- Black pepper
Directions
- Boil 4 cups of water in a pressure cooker. Wash the meat, add to the water, and remove any foam.
- Cover the pressure cooker, and once it comes to a steady steam, cook for 25 minutes and remove from heat.
- Once cooled, uncover and add peeled, whole onions and potatoes and chopped carrot and celery. Add salt and black pepper.
- Cover and cook for 10 minutes.
- In a separate bowl whisk together egg yolks, lemon juice and 2-3 tablespoons of water. Once the stock has cooled, uncover and add the mixture into the meal. Sprinkle diced parsley over the dish.
