Mutton With Vegetables (Boiled)

Ingredients

  • 1 kg mutton meat with bones
  • 3-4 small onions
  • 3-4 potatoes
  • 1 small celery stalk
  • 1 carrot
  • 1-2 eggs yolks
  • Juice of 1-2 lemons
  • 6-7 sprigs of parsley
  • Salt
  • Black pepper

Directions

  • Boil 4 cups of water in a pressure cooker. Wash the meat, add to the water, and remove any foam.
  • Cover the pressure cooker, and once it comes to a steady steam, cook for 25 minutes and remove from heat.
  • Once cooled, uncover and add peeled, whole onions and potatoes and chopped carrot and celery. Add salt and black pepper.
  • Cover and cook for 10 minutes.
  • In a separate bowl whisk together egg yolks, lemon juice and 2-3 tablespoons of water. Once the stock has cooled, uncover and add the mixture into the meal. Sprinkle diced parsley over the dish.
