Yayla Soup

Ingredients

  • 8 cups of beef stock
  • 1/2 a cup of rice
  • 1 egg
  • 1 tablespoon of flour
  • 2 cups of plain yogurt
  • 2 tablespoons of oil
  • 2 teaspoons of dried mint
  • 1 teaspoon of dried red pepper
  • Salt

Yayla soup recipe

  1. Wash rice and bring to a boil in beef stock.
  2. Beat together yogurt, egg and flour, and dilute with half a cup of water.
  3. Add mixture to the boiling rice and let simmer. Add salt.
  4. When serving, sprinkle with dried mint and a mixture of heated oil and red pepper over the soup.
